Bleu Heaven Pizza

I couldn't possibly come up with a better name for this pizza!  It IS a little slice of heaven! 
We don't go to the mountains as much as we should for as close as we live.  But, when we go, Angel Fired Pizza is a must on my list of "to do's."  It's just a quaint little pizza parlor with imported beer, the BEST house-made Sangria ever, and "Bleu Heaven" pizza.  They have all kinds of pizza, but I only go for THIS pizza!  It's steak, bleu cheese, carmelized onions, and olive oil on a thin crust!  Oh...my mouth is watering just thinking about it!  I know that this is not necessarily for everyone's taste palet, but for those of you brave enough to try it...you will NOT be disappointed.  I actually have added an alfredo sauce for the base because I think it adds a little "something" and ensures that the pizza won't be too dry.


Meet your ingredients:

2 tbs. olive oil
1 mega big sweet onion
1/2 - 3/4 c of bleu cheese
3/4 - 1 lb of steak (any kind, but for such a small amount needed...go for the good stuff!)
thin pizza crust (don't be a hater of the "tubed" pizza crust...but make your own if that's your style!)
NOTE:  2 tbs. red wine...I forgot it in the pic!!!
And the ingredients for the alfredo sauce:
This is the same sauce as the fettucinni alfredo...just a mini version!
2 tbs butter
2 tbs cream cheese
1/4 c parmesean cheese
1/4 c cream, milk, or half & half



Start the onion FIRST THING!  The longer these babies cook...the better!
Get 'em all sliced up!

Pour the olive oil in a heavy sauce pan and get it nice and hot!


Throw in the onions!  Stir them around to coat with the oil...season with salt and pepper...turn the heat down to med/low and just let 'em hand out in the hot tub!



Break out the STEAK!!  Trim off any excess fat, pat dry, and season well with salt, pepper, and garlic powder.


Heat a skillet with 1 tbs. butter and 2 tbs red wine.  I like to get it REALLY hot and let the wine and butter reduce to a thick syrup before I add the steak.  NOTE:  The hotter the better (at least initially)...you want to sear the steak, not boil it!



Sear the steak well on both sides (2-3 minutes per side for thin steaks / 4-5 for a thicker steak).  Take it out of the pan and let it rest for at least 5 minutes before you slice. 


Go stir the onions! 

This is the perfect time to make your sauce!  Marry the butter and cream cheese in a sauce pan....they love each other...it's a match made in "bleu heaven:!"


Add the parmesean cheese and let it get all melty!  Then add the dairy juice of your choice until it is a thick sauce...season with salt and pepper!  Set aside



Stir the onions!!

Preheat your oven for the pizza dough!!

I had a sous chef this evening and she handled the pizza dough for me!  I like to roll my pizza dough out on a thin layer of corn meal to give a more authentic pizza parlor texture!  Poke just a few holes in the dough to keep it from bubbling in the oven.  Put it in the oven for some heat...it just needs a little tan not a full on bronze!


It should look like this...well...yours may be perfectly shaped and rolled...but mine has character!!  The color is perfect though!


"Schmear" it with sauce!



Your onions should look and smell delicious right about now!  Check out the "caramel" color...perfection! 


Spread the onions evenly and drizzle the oil left over on the pizza too!  I could eat it like this...but it's about to get soooo much better!


Slice the steak thin.


Taste this...it's insanity!  The wine...the butter...the seasoning...DELICIOUS!!
OK...stop now...you have to save some for the pizza!  Go ahead and put it on!  NOTE:  I dripped the juice from the pan that the steak cooked in all over the pizza too!  CRAZY!!


Now the finishing touch...BLEU CHEESE!  I know it's not for everyone and maybe you could try another cheese if it's not your thing...I do not guarantee that...I DO guarantee this!!! 
Try to crumble the cheese into the smallest pieces possible...it covers the pizza better and melts beautifully this way!


Hurry get this baby in the oven so you can eat it!!!  It takes about 10 min. on 375* to finish crisping up the crust and melting the bleu cheese!



AGHHHH! It's ready!!!  This is the perfect combination of sweet onions...salty & tangy bleu cheese...savory steak...creamy sauce...crispy crust......IT DOES NOT GET MUCH BETTER!!!  Go ahead...dig in!!
